Summer of Smoothies: Watermelon Chiller

August can be a hard month: while cramming in as much vacation and beach time as we can muster, we’re also getting ready for all the things we’re planning for fall. But with that full-on, steamy summer heat still going strong, juggling the demands of the two seasons seems almost impossible.

The Watermelon Chiller is perfect for those days when it’s really too hot to do anything, but we’re going to do it anyway. This light, replenishing smoothie is intensely hydrating, with its watermelon and coconut water. And the raspberry and lemon juice bring vitamin C and a little zing that really brings up the flavor of the watermelon.

Watermelon Chiller Smoothie:

4 cups watermelon chunks, seeded
1/2 cup fresh or frozen raspberries
3 ounces coconut water, frozen into cubes
Juice of 1/8 lemon

Directions
* Place all ingredients in a blender.
* Blend on high until smooth, pulsing when necessary to liquify.
* Makes 3 12-oz servings.
